So I was asked to bake a cake for work. The gauntlet had been laid down I was up for the challege.
I love a bit of cooking. A little known fact I got down to last 20 for Come Dine With me. The crew even came out and filmed me in my flat.
So what to make to impress my collegues.. Well I was thinking cheesecake, but I found a sponge cake mix in the cupboard. So a nice victoria sponge. Well that went a nit t**s up. The cake, made to the pack instructions, didnt rise so I ended up with two pancake like creations. What to do? Well Uncle Google suggested I could rip up a sponge cake (destroy my own baking) , line a tin with the pieces, and bung a mix of condesnsed milk, (I used evaporated), some sugar and cream cheese. and I used some almond essence; as i didnt have vanila essence, and a bit of lemon juice. The wet mixture gets layered ontop of the cake crumbs with chopped bannana layers (bananas dipped in lemon juice.) Banana layer on top of cake crumbs;. more bananas on top of wet mixture and I put chocolate chunks on top. Chill for 3 hours and then tuck in, or in my case try a bit and save it for work. Basicly a cheese cake but with cake base not biscuit. I made this simply using stuff I had at home. A real store cupboard baking project. I admit pucture isnt up to to cookbook standard but this is real life my dear!
